CHICKPEA SALAD

Hello Lovelies!

I have seen chickpea salad in quite a few What I ate in a day posts and I decided I wanted to give it a try. I love hummus and chickpeas so I thought this would be a great food for me. I looked up a few recipes for it but none of them were perfect for me so I took aspects of a lot of recipes and kind of made my own.



Serves: 2-4 ( I usually use this as a main meal but if its used as a side it will serve more)
Ingredients:
1 15oz. can of chickpeas
a squeeze of a lemon
1/4 of an onion (I used vidalia) chopped
1 TBS of Hummus (optional)
1/4 Cup red bell pepper chopped
Handful of spinach diced
Salt and pepper to taste

Directions:
1. Drain and rinse the the chickpeas and put into a bowl.
2. Mash the chickpeas until they are a chunky consistency.
3. Add all the other ingredients in and stir together. (Hint: a little lemon goes a long way! the first time I made this I used way to much lemon and it was all I could taste.) I also added in some hummus to make it more smooth and creamy but if you want a more chunked salad than you don't have to add in the hummus, I also used a garlic hummus so it added another flavor into the miss that was very good.




This salad is great on its own as a side dish or as a sandwich filler. I personally like to eat it on an open faced sandwich with some tomato, avocado and a little more greens.
