CRANBERRY ALMOND SCONES || BLOGMAS

If there's one aspect of Christmas that holds a lot of traditions its definitely food! We really embrace our Scandinavian side this time of year with Kringle, Glodd, Bond-Ost, Sprtiz. So I thought why not add to the eating and try a new recipe? lol. I love everything almond this time of year so I wanted to bake something almond so I decided on Cranberry-almond.
Ingredients:
3 cups all-purpose flour1 cup sugar
1 tablespoon baking powder
Pinch salt
1/2 teaspoon ground cinnamon
1 1/2 sticks cold butter, cut into tiny pieces
1 cup dried cranberries
1/2 cup toasted slivered almonds
1/2 cup heavy cream
Turbinado sugar (optional)
1/2 cup heavy cream
Turbinado sugar (optional)
Directions:
Preheat oven to 375 degrees F.
In a small bowl, combine the flour, sugar, baking powder, lemon zest, salt and cinnamon. Add in the butter and rub with your fingers into the dry ingredients until you get a crumbly consistency. Add in the cranberries and almonds. Add the heavy cream and combine it into the butter flour mixture.
Form the dough into a 1-inch thick disk and cut it into 8-10 wedges ( I made 8 and they were pretty big you could probably get 10 out of a batch). Sprinkle each wedge generously with the turbinado sugar (optional). Transfer the wedges to a parchment-lined sheet pan and bake for 18 to 20 minutes, turning the pan halfway through
These are honestly the most amazing scones I've ever had! And its really easy to change out the fillings for whatever you like! I think orange and chocolate sounds good or lemon and ginger!
