GO-TO HEALTHY SUMMER LUNCH - COTTAGE CHEESE SALAD

Lately, I've been trying my best to eat healthy since the past few days have been a lot of eating out and a lot of junk foods. As you could probably guess it tasted great in the moment but I quickly started feeling gross. So since then I've been trying really hard to eat healthily and lunch is one of those meals where I don't really know what to do with myself. I feel like its probably the easiest meal to be unhealthy with bread-y sandwiches and chips everywhere you look.
This recipe is super easy because you can really adjust it however you want and add your favorite veggies but, this is my favorite way to make it.
I make my salads individually rather than a big batch because I think it tastes more fresh but you can double up on ingredients to make this for more people.
First, I make the base with a couple handfuls of whatever greens I have on hand, usually a spinach/arugula blend because its my favorite.
Next, I add on my toppings. I used 1/4 of a cucumber with the skin still of because I like the taste and the skin is where all the nutrients are, 1/4 of a tomato chopped, and 1/2 of an avocado cubed.
Finally, The most important part! The cottage cheese! Cottage cheese is very good for you, it's high in protein, calcium, and iron (which I'm forever deficient in). I also use the low fat cottage cheese so this meal has very low fat and the fat from the avocado is good for you.
The cottage cheese acts as the dressing for this salad so it is also oil free and I just top it with salt, pepper, and paprika to give it more flavor.
This salad also gives me a bunch of energy and keeps me full throughout the afternoon so I'm doing less snacking.
