Hello Everyone!
Today, I want to share a caramel apple cookie recipe that I thought of while apple picking (See that post here). In my opinion these taste like a mix between a gingerbread cookie and an oatmeal raisin cookie (am I the only person who low-key loves oatmeal cookies? Probably, but I'm okay with that) and are sure to be a crowd pleaser come Thanksgiving!
INGREDIENTS:
1/2 cup shortening1 1/3 cups packed brown sugar
1 egg
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground Nutmeg
1 medium apple (peeled, cored and diced)
1/4 cup milk
5.5 oz of Kraft Caramel Bits
DIRECTIONS:
1. Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
2. Stir together flour, baking soda, salt, cinnamon and nutmeg.
3. Stir the dry ingredients into creamed mixture. Stir in apple and milk.
4. Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet.
5. Bake in a preheated 400 degree oven for 12-14 minutes.
6. While the cookies are baking, follow the directions on the back of the caramel bits or make your own caramel (I took the lazy route lol).
7. While the cookies are still hot drizzle the caramel over the cookies and let cool until the caramel has hardened.
